Healthy Broccoli Salad

Serves 4

Ingredients

  • 1 bunch broccoli (cut into florets)
  • 2 bunches green onions (diced)
  • 1 cup non-fat mayonnaise (nonfat if desired)
  • 2 tablespoons red wine vinegar
  • 1 teaspoon sugar (or to taste)
  • ¼ teaspoon each, salt and pepper
  • 8 oz. Crumbled Feta cheese
  • 12-15 black olives (cut in half)
  • Bibb or romaine lettuce

Steps

  1. Wash and prepare broccoli and green onions. Set aside.
  2. Mix together mayonnaise, red wine vinegar, sugar, salt and pepper.
  3. Pour over vegetables.
  4. Add Feta cheese and olives.
  5. Toss well and place in refrigerator for 2-4 hours.
  6. Serve on lettuce leaves on chilled plates.

If you prefer your broccoli cooked, remember that when cooked it should be crisp and bright, and just tender enough that you can pierce the stalks with a sharp knife. Steaming and microwaving maintain more nutrients, but you also can cook it in boiling water. The florets tend to cook much faster than the stalks, but it's easy to avoid it being overcooked if you cut an X in the bottom of each stalk, or split the stalks about halfway up, before cooking. Someone else method is to cut off the florets, adding them to the cooking pot after the stalks have cooked for two or three minutes.

Salsa Chicken

Ingredients:

6 boneless skinless chicken breasts

1 ½ cups salsa

1 tsp ground cumin

3 tbsp lime juice

Spray crock pot with non-stick cooking spray. Place chicken in slow cooker, pour salsa over chicken. Cover and cook on low 6-7 hours or high 3 hours, until chicken is tender and no longer pink. Stir in cumin and lime juice, cover and cook an supplementary 15 minutes.

Note: For an extra spicy kick, add a pinch of ground red chili powder with the cumin and lime juice.

Lemon Chicken

Ingredients:

4 boneless skinless chicken breasts

¼ lemon juice

1/3 cup water

2 cloves minced garlic

1 tsp thyme

Spray crock pot with non-stick cooking spray. Place chicken in crock pot. Concentrate juice, water, garlic, and thyme in a small bowl, pour over chicken. Cover and cook on low 8 hours or high 4 hours.

Ranch Chicken

Ingredients:

6 boneless skinless chicken breasts

1 can condensed cream of chicken soup

1 envelope ranch dressing mix

½ cup water

½ cup sour cream

2 tbsp ranch dressing

2 tbsp flour

Spray crock pot with non-stick cooking spray. Place chicken breasts in crock pot. In a small bowl, Concentrate soup, ranch dressing mix, and water; pour over chicken. Cover and cook on low 8 hours or high 4 hours. Remove chicken from crock pot. Stir in sour cream, ranch dressing, and flour; replace chicken. Cover and cook on high 20 minutes.

Note: Ranch chicken leftovers are excellent for sandwiches, chicken tortilla wraps, or a tasty chicken casserole.

Vanilla Fudge Recipes - Easy Vanilla Fudge

This quick and straightforward recipe is made with sweetened condensed milk.

3 cups white sugar

1/2 cup corn syrup

1 1/4 cup condensed milk

1/4 pound butter

1 teaspoon vanilla extract

Directions

In a saucepan or double boiler, concentrate the white sugar, white syrup, condensed milk and butter. Cook over medium heat until fudge reaches the firm ball stage on a candy thermometer. Remove from heat and beat in the vanilla extract.

Turn the fudge out onto a prepared sheet of buttered wax paper. Let cool. Cut into squares.

Line a 9x13-inch pan with foil, let the foil increase over the sides of the pan. Butter foil thoroughly.

In a large saucepan, concentrate the sugar, butter and the milk. Bring to a boil, stirring constantly. Continue to boil for 5 minutes over medium heat, stirring constantly. Remove pan from heat.

Add in the marshmallow crème, white chocolate bar, pecans and vanilla. Stir composition until smooth. Pour into prepared pan. Let cool to room temperature. Refrigerate until firm.

Here's a great homemade vanilla fudge with crunchy black walnuts.

1 package vanilla bits

2 cups sugar

5 oz. Evaporated milk

1/4 cup butter

1 teaspoon vanilla

1/2 cup black walnuts

7 oz. Marshmallow crème

Directions

Grease a 9x9x2-inch pan.

In a heavy saucepan, concentrate the sugar, milk and butter. Cook over medium heat, stirring constantly until the composition comes to a boil. Continue boiling and stirring for someone else 5 minutes. Remove from heat.

Add in the vanilla bits, vanilla, walnuts and marshmallow crème, stirring until well blended. Pour fudge composition into the prepared pan. Let cool. Cut into squares.

=> Cherry Vanilla Fudge

A rich, creamy and colorful fudge that's excellent for any occasion.

2 cups granulated sugar

1/2 cup dairy sour cream

1/3 cup light corn syrup

2 tablespoons butter

1/4 teaspoon salt

2 teaspoons vanilla

1/2 cup Maraschino cherries, quartered

1 cup walnuts, coarsely chopped

Directions

Butter an 8-1/2 x 4-1/2-inch loaf pan.

In a microwaveable bowl, concentrate the sugar, sour cream, corn syrup, butter and salt. Microwave on high heat for 5 minutes. Stir well until the sugar is dissolved.

Microwave on high heat for someone else 6 minutes, or until the composition reaches 236 degrees on a candy thermometer. Let stand for 15 minutes (do not stir).

Add in the vanilla and beat the composition about 6 minutes (until it starts losing its gloss).

Stir in the cherries and walnuts. Pour into prepared pan. Let cool. Cut into squares.

2 large eggs
1/6 cup sliced mushrooms

2 slices turkey bacon

This formula will also take 10 minutes to prep and 10 minutes to cook.

First, chop onions, peppers, and mushrooms.

Second, you'll beat the eggs in a bowl.

Next, you will cook the vegetables in the olive oil for about 5 minutes.

Finally, you'll reduce the heat, add the egg mixture, cook and stir for about 5 minutes. Serve the bacon on the side and you're ready to eat!

3) Grilled Salmon with Spinach and Tomato Stack

Ingredients
2 tbsp extra virgin olive oil
1 cup spinach
1 fillet of salmon
2 tbsp fresh basil
1 medium tomato
1 tbsp balsamic vinegar

You'll start by brushing the pan with olive oil, heating it until it's sizzling hot, and then put the salmon down, skin side down.

Add the tomato (sliced) and sprinkle half the basil leaves and cook for 3-4 minutes.

Turn over the salmon and tomato and cook for other 2-3 minutes, until the salmon is cooked through but still tender.

Remove the pan from the heat; put the spinach leaves on the serving plate, top with the tomato slices, and then the salmon.

Drizzle with a few drops of olive oil and some balsamic vinegar, then sprinkle with the remaining chopped basil leaves. Serve immediately.

  4. Add tomatoes and their juices, and jalapeño. Bring to a boil over high heat. Sell out heat to medium; cover and cook 5 minutes.
  5. Pour sauce over pasta.
  6. Sprinkle with cheese and cilantro. Toss to mix.
